Ingredients:

  • 8 oz (0.5 kg) Ontario cooked roast of pork, very thinly sliced (or fresh deli ham)
  • 2 cups (500 mL) broccoli florets, coarsely chopped 
  • 1 red pepper, in large chunks
  • 4 green onions, trimmed, coarsely chopped
  • 8 oz. (250 g) pkg. light cream cheese, in chunks
  • 3 oz (100 g) crumbled blue cheese 
  • 1 Tbsp (15 mL) lemon juice 
  • 1 tsp (5 mL) Worcestershire sauce
  • 8 10-inch (25 cm) tortillas or wraps
  • 1/2 cup (125 mL) chopped toasted almonds 
  • Chopped fresh parsley

Cooking Instructions:

  1. Place broccoli, red pepper and green onion in a food processor. Pulse until coarsely chopped; remove and reserve. 
  2. Add cream cheese, blue cheese, lemon juice and Worcestershire sauce and process to blend. 
  3. Add reserved vegetables; pulse just enough to mix. 
  4. Evenly spread one side of each tortilla with cheese mixture. Layer each with equal amounts of sliced pork. Sprinkle with almonds and parsley. 
  5. Roll up tightly. Wrap in plastic wrap and refrigerate. To serve, cut each into 6 pieces.
