Ingredients:

  • 4 lb. Ontario pork shoulder blade roast
  • 1 tsp salt
  • 1 tsp pepper
  • 6 Tbsp garlic, chopped
  • 1 cup Dijon mustard
  • 2/3 cup honey
  • 2 Tbsp white vinegar
  • 2 tsp dried parsley flakes
  • 4 cups onion, chopped
  • 1 can (284 mL) chicken broth

Cooking Instructions:

  1. Add pork roast to a slow cooker and season with salt, pepper and parsley.
  2. In a bowl mix garlic, mustard, honey and vinegar. Spread half of the mixture all over the roast (reserve the rest in the fridge). 
  3. Add onion and chicken broth to the slow cooker, cover and cook on low 8-9 hours.
  4. Remove roast from slow cooker and shred all the pork with two forks. 
  5. Strain the onions out of the slow cooker and add to bowl along with the remaining honey dijon mixture. Toss to coat. 
  6. Serve with potatoes and vegetables or use mixture as Monte Cristo sandwich filling.
