Monte Cristo Sandwiches

Ingredients:

  • 1/2 cup Honey Dijon Shredded Pork
  • 2 eggs
  • 1/3 cup of milk
  • a pinch of salt and pepper
  • 2-3 Tbsp of cranberry sauce
  • 4 slices of sourdough bread
  • 2 thin slices of brie cheese
  • 2 tsp of grainy mustard
  • 1 Tbsp butter

Cooking Instructions:

  1. Preheat oven to 350ºF. and line a baking sheet with parchment.
  2. In a shallow bowl whisk 2 eggs with 1/3 cup of milk, and a pinch of salt and pepper.
  3. Spread 2-3 Tbsp of cranberry sauce over 2 slices of sourdough bread. Top with 2 thin slices of brie cheese and ½ cup of reserved Honey Dijon Shredded Pork. Spread 2 tsp of grainy mustard over the other 2 slices of bread; press onto pork mustard side down.
  4. Soak sandwiches in egg mixture for about 30 seconds per side.
  5. In a non-stick pan heat 1 Tbsp butter over medium-high heat; brown sandwiches, turning once, until golden. Transfer to baking sheet and place in oven for 5 minutes to fully melt the cheese. Serve immediately.
