Skillet Pork Chops with Cider Rate this article: 4.8 5762 Print Yield:Serves 4 Prep Time: 10 minutes Cooking Time: 15 minutes Ingredients: 4 bone-in Ontario pork loin chops (about 1 1/2 lb/750 g total) 1 tsp (5 mL) dried thyme leaves or 2 tsp (10 mL) chopped fresh thyme leaves 1/2 tsp (2 mL) pepper 1/2 tsp (2 mL) salt, divided 1 tbsp (15 mL) canola oil 1 shallot, thinly sliced 2 cloves garlic, minced 1 cup (250 mL) hard apple cider 1/4 cup (60 m L) 35% whipping cream Chopped fresh parsley (optional) Cooking Instructions: Sprinkle pork chops all over with thyme, pepper and all but a pinch of the salt. In a large nonstick skillet, heat oil over medium-high heat and brown pork chops on both sides. Remove pork chops to a plate. Reduce heat to medium-low and add shallots and garlic. Cook, stirring for about 6 minutes or until softened and starting to brown. Add cider, cream and remaining salt; bring to a simmer. Return pork chops to skillet. Cook, turning occasionally for about 5 minutes or until hint of pink remains (an internal temperature of 155F) in the pork chops and sauce thicken slightly. Serve pork chops with sauce spooned over top and sprinkled with parsley, if desired. Butter Cider Variation: Omit cream and substitute 3 tbsp (45 mL) of butter for the whipping cream.
