Best Caramelized Onion and Bacon Dip

Ingredients:

  • 1 pkg (375 g) sliced Ontario-raised bacon
  • 1 tbsp (15 mL) each butter and canola oil
  • 1 lb (454 g) sweet onions (about 1 large), diced
  • 2 tsp (10 mL) chopped fresh thyme
  • 1/4 cup (60 mL) beer or water
  • 2 cloves garlic, minced
  • 3/4 cup (175 mL) 14% sour cream
  • 3/4 cup (175 mL) mayonnaise
  • 1 tsp (5 mL) Worcestershire sauce
  • Fresh ground pepper to taste

Cooking Instructions:

  1. Line a baking sheet with foil and lay bacon slices in a single layer. Preheat oven to 400ºF (200ºC).
  2. Place bacon in oven for about 18 minutes or until crisp. Remove to a paper towel lined plate; set aside.
  3. Meanwhile, in a large skillet, melt butter with oil over medium-high heat. Add onions and thyme; cook, stirring often for about 6 minutes or until staring to brown. Reduce heat to medium and stir in beer and garlic. Cook, stirring occasionally for about 18 minutes or until onions are softened and deep golden brown. Let cool slightly.
  4. Meanwhile, chop bacon and place in a large bowl, Stir in sour cream, mayonnaise and Worcestershire sauce. Add bacon and stir to combine. Season with pepper to taste.

Tip: Cover and refrigerate for up to 5 days.

Use this to top burgers, hot dogs or enjoy with baked potatoes or French fries. Stirred into mashed potatoes it will not let you down!
