Quinoa Pork and Apple Salad

Ingredients:

  • 1 Ontario pork tenderloin (about 1 lb/454 g), cut into thin strips
  • 2 tsp (10 mL) canola oil
  • 1 leek, white and light green part only, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 tsp (1 mL) freshly ground black pepper
  • 1 stalk celery, diced
  • 2 tsp (10 mL) each chopped fresh thyme and sage
  • 1 cup (250 mL) quinoa, rinsed
  • 2 cups (500 mL) sodium-reduced vegetable broth
  • 1 tart apple, cored and chopped
  • 1/2 cup (125 mL) dried cranberries or raisins
  • 1/4 cup (60 mL) chopped fresh cilantro or parsley

Cooking Instructions:

  1. In a large non-stick skillet, heat oil over medium heat and cook leeks and garlic for 3 minutes to soften. 
  2. Add pork tenderloin and pepper and increase heat to medium high and saute for 5 minutes or until browned. Remove to plate.   
  3. Reduce heat to medium and cook celery, thyme, sage and quinoa, stirring for 5 minutes or until starting to pop. 
  4. Add broth and bring to a simmer. Cover and cook for 10 minutes. 
  5. Stir in pork, apple and cranberries; cover and cook for about 8 minutes or until pork has a hint of pink. 
  6. Fluff with fork into a large bowl and stir in cilantro.
