Ontario Apple Smother Sauce

Ingredients:

  • 1 Tbsp (15 mL) olive oil      
  • 1 cup (250 mL) onion, chopped
  • 1 Tbsp (15 mL) EACH garlic and ginger, chopped 
  • 1 can (28 oz/796 mL) ground tomatoes
  • 1 cup (250 mL) apple cider
  • 1/4 cup (50 mL) brown sugar1/2 cup (125 mL) cider vinegar
  • 1 Tbsp (15 mL) Dijon mustard
  • 1-2 chipotle peppers, canned
  • 1 Tbsp (15 mL) adobo sauce
  • 1/2 tsp (2 mL) EACH salt and pepper
  • 1/2 cup (125 mL) Ontario apple butter

Cooking Instructions:

  1. In saucepan, heat oil over medium high heat and cook onions, stirring occasionally until translucent and tender, about 5 minutes. Stir in garlic and ginger; cook one minute until fragrant but not browned. 
  2. Add tomatoes, apple cider, brown sugar, cider vinegar, mustard, peppers, adobo sauce, salt and pepper. 
  3. Bring to a boil, reduce heat and simmer, stirring often until sauce is thickened and reduced to about 1 1/2 cups (375 mL), about 45 minutes. 
  4. Let cool 15 minutes. Stir in apple butter until well combined.
