Ingredients:

  • 4 boneless Ontario pork loin chops (about 1 lb/500 g)
  • 1/2 tsp (2 mL) each salt and pepper
  • 1/2 tsp (2 mL) dried thyme
  • 1 tbsp (15 mL) each canola oil and butter
  • 2 apples, cored and sliced
  • 2 shallots, thinly sliced
  • 3 tbsp (45 mL) light brown sugar
  • 1/4 tsp (1 mL) ground cinnamon
  • 1/2 cup (125 mL) apple cider or apple juice
  • Chopped parsley

Cooking Instructions:

  1. Sprinkle pork chops all over with salt, pepper and thyme.
  2. In a large skillet, heat oil and butter over medium-high heat. Brown chops on both sides and remove to a plate.
  3. Add apples and shallots and sauté for about 3 minutes or until starting to brown. Reduce heat to medium. Sprinkle brown sugar and cinnamon all over apple mixture. Add apple cider and bring to a simmer.
  4. Return pork chops to pan and turn to coat with sauce. Simmer gently for about 8 minutes or until sauce is reduced slightly and meat thermometer registers 155ºF (68ºC) when tested.

Tip: Apple Cider with or without alcohol can be used in this recipe.
