Instant Pot Apple Butter Basted Side Pork Ribs Rate this article: 4.0 5695 Print Yield:Serves 8-10 Prep Time: 10 minutes Cooking Time: 1 hour Ingredients: 2 racks of Ontario pork side ribs (about 5 lb/2.5 kg) 2 Tbsp (30 mL) brown sugar 2 Tbsp (30 mL) smoked paprika 1 Tbsp (15 mL) garlic powder 2 tsp (10 ml) each dried thyme leaves and salt 1/2 cup (125 mL) each apple butter and water 1/4 cup (60 mL) apple cider vinegar 2 Tbsp (30 mL) each cornstarch and water Cooking Instructions: In a small bowl, stir together sugar, paprika, garlic powder, thyme and salt; set aside. Turn ribs over to meaty side down and remove membrane from back of ribs. Rub ribs with spice mixture well on both sides. In a bowl or measuring cup, whisk together apple butter water and vinegar. Set rack in bottom of large Instant pot and pour in apple butter mixture. Place ribs, meaty side out into instant pot; curling to fit. Secure lid and close vent. Press manual or pressure cook and cook on High pressure for 35 minutes. When the timer goes off, let the pressure release naturally for 15 minutes then turn the valve to quick release. Carefully remove ribs to foil-lined baking sheet laying meaty side up. Brush with some of the drippings from pot. Pour remaining juice into a small pot and bring to a simmer. Whisk together cornstarch and water and whisk into juices until thickened. Place ribs under your oven's broiler, about 6 inches (15 cm) from heat for about 5 minutes, basting twice with sauce or until golden and caramelized.
