Cauliflower Fried Rice with Pork Rate this article: 4.3 3803 Print Yield:Serves 4 Prep Time: 5 minutes Cooking Time: 30 minutes Ingredients: 1 lb. ground Ontario pork 1 medium head of cauliflower 2 Tbsp sesame oil 1 carrot, minced 2 cloves garlic, minced 1 cup frozen edamame 2 eggs, beaten 4 green onions, sliced 2 Tbsp sesame seeds Stir Fry Sauce: 1/4 cup honey 1/4 cup soy sauce 1/4 cup sesame oil 1/4 cup oyster sauce 1/4 cup hoisin sauce Cooking Instructions: Shred Cauliflower with a coarse box grater or pulse in good processor to a rice like texture. Combine all ingredients for stir fry sauce and set aside. Makes about 1 cup. Heat 1 Tbsp sesame oil on a large frying pan over medium/high heat. Add pork and stir until fully cooked. Add 1/3 cup of Stir Fry Sauce and stir to coat pork. Remove pork mixture to a small bowl and set aside. Add 1 Tbsp sesame oil to frying pan along with carrots. Cook, stirring for 2-3 minutes. Add garlic and cook one more minute. Add cauliflower and edamame, cook stirring, for 1-2 minutes. Add pork back on and stir to combine. Turn the heat down to medium. Make a well in the centre of the pan and add eggs. Stir whole mixture gently until eggs are fully cooked, about 1 minute. Stir in 1/3 cup Stir Fry Sauce along with green onions. Serve drizzled with remaining Stir Fry Sauce and sesame seeds.
