Cauliflower Fried Rice with Pork

Ingredients:

  • 1 lb. ground Ontario pork
  • 1 medium head of cauliflower
  • 2 Tbsp sesame oil
  • 1 carrot, minced
  • 2 cloves garlic, minced
  • 1 cup frozen edamame
  • 2 eggs, beaten
  • 4 green onions, sliced
  • 2 Tbsp sesame seeds

Stir Fry Sauce:

  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1/4 cup sesame oil
  • 1/4 cup oyster sauce
  • 1/4 cup hoisin sauce

Cooking Instructions:

  1. Shred Cauliflower with a coarse box grater or pulse in good processor to a rice like texture.
  2. Combine all ingredients for stir fry sauce and set aside. Makes about 1 cup.
  3. Heat 1 Tbsp sesame oil on a large frying pan over medium/high heat. Add pork and stir until fully cooked. Add 1/3 cup of Stir Fry Sauce and stir to coat pork. Remove pork mixture to a small bowl and set aside.
  4. Add 1 Tbsp sesame oil to frying pan along with carrots. Cook, stirring for 2-3 minutes. Add garlic and cook one more minute. Add cauliflower and edamame, cook stirring, for 1-2 minutes. Add pork back on and stir to combine.
  5. Turn the heat down to medium. Make a well in the centre of the pan and add eggs. Stir whole mixture gently until eggs are fully cooked, about 1 minute. Stir in 1/3 cup Stir Fry Sauce along with green onions. Serve drizzled with remaining Stir Fry Sauce and sesame seeds.
