Ingredients:

  • 1 lb (454 g) Ontario pork sausages
  • 1 tbsp (15 mL) canola oil
  • 1 onion, chopped
  • 1 each carrot and celery, chopped
  • 1 apple, cored and diced
  • 3 tbsp (45 mL) chopped fresh sage
  • 2 cloves garlic, minced
  • 6 cups (1.5 L) cubed day-old bread
  • 1/3 cup (75 mL) shredded parmesan cheese
  • 1/2 cup (125 mL) vegetable broth
  • 3 tbsp (45 mL) butter, cubed

Cooking Instructions:

  1. Remove casings from sausages and discard.
  2. Preheat oven to 400ºF (200ºC).
  3. In a large heatproof skillet, heat oil over medium-high heat and cook sausage meat breaking up with back of spoon for about 5 minutes. Add onion, carrot, celery, apple, sage and garlic; cook stirring for 5 minutes or until softened.
  4. Stir in bread and cheese. Drizzle over broth and stir to combine.
  5. Place butter all over top and bake for about 20 minutes or until golden brown.
