Slow Cooker Pork Roast and Apples

Classic flavours of pork and apples make for a delicious pork roast family meal in the slow cooker. Use a firm cooking apple like Honey Crisp, Cortland or for a sweeter flavour Royal Gala.

Yield: Serves 6-8
Preparation Time: 10 minutes
Cooking Time: 6 hours on LOW; 3 hours on HIGH

 

Ingredients:

  • 1 boneless centre cut Ontario pork roast (about 2 lb/1 kg)
  • 2 tbsp (30 mL) Cajun seasoning
  • 2 tbsp (30 mL) chopped parsley
  • 2 apples, cored and sliced
  • 1 large onion, sliced
  • 1 large carrot, sliced
  • 1/2 cup (125 mL) apple juice
  • 2 tbsp (30 m) cornstarch
  • 2 tbsp (30 mL) water
  • 1/4 tsp (1 mL) each salt and pepper

Cooking Instructions:

  1. Remove any netting or string from pork roast, if any and discard. Pat roast dry.
  2. In a small bowl, combine Cajun seasoning and parsley and rub all over roast.
  3. Stir together apples, onion, carrot and apple juice in bottom of slow cooker. Place roast on top and cover with lid. Cook on LOW for 6 hours or on HIGH for 3 hours. Remove roast to a cutting board and tent with foil. Increase slow cooker to HIGH, if necessary.
  4. In a small bowl, whisk together cornstarch, water, salt and pepper. Pour into slow cooker and cook, stirring for about 10 minutes or until thickened slightly.
  5. Slice pork roast and serve with apple sauce.
