Classic flavours of pork and apples make for a delicious pork roast family meal in the slow cooker. Use a firm cooking apple like Honey Crisp, Cortland or for a sweeter flavour Royal Gala.

Cooking Time: 6 hours on LOW; 3 hours on HIGH
Ingredients:
- 1 boneless centre cut Ontario pork roast (about 2 lb/1 kg)
- 2 tbsp (30 mL) Cajun seasoning
- 2 tbsp (30 mL) chopped parsley
- 2 apples, cored and sliced
- 1 large onion, sliced
- 1 large carrot, sliced
- 1/2 cup (125 mL) apple juice
- 2 tbsp (30 m) cornstarch
- 2 tbsp (30 mL) water
- 1/4 tsp (1 mL) each salt and pepper
Cooking Instructions:
- Remove any netting or string from pork roast, if any and discard. Pat roast dry.
- In a small bowl, combine Cajun seasoning and parsley and rub all over roast.
- Stir together apples, onion, carrot and apple juice in bottom of slow cooker. Place roast on top and cover with lid. Cook on LOW for 6 hours or on HIGH for 3 hours. Remove roast to a cutting board and tent with foil. Increase slow cooker to HIGH, if necessary.
- In a small bowl, whisk together cornstarch, water, salt and pepper. Pour into slow cooker and cook, stirring for about 10 minutes or until thickened slightly.
- Slice pork roast and serve with apple sauce.
