This classic appetizer has a new twist, pork belly! Delicious on its own or serve it up with mashed potatoes or creamy polenta. Each bite leaves you wanting another.
Yield: Serves 4-6
Preparation Time: 10 minutes
Cooking Time: 4 or 8 hours
Ingredients:
- 1 Ontario pork belly (about 2 lb/1 kg) skinless
- 2 cups (500 mL) beef broth or water
- 2 cloves garlic, sliced
- 3/4 cup (175 mL) grape jelly
- 3/4 cup (175 mL) ketchup
- 1/2 tsp (2 mL) hot pepper flakes
Cooking Instructions:
- Place pork belly into slow cooker and add broth and garlic. Cover and cook on LOW for 6 hours or on HIGH for 3 hours. Carefully remove pork belly and pat dry. Discard broth and garlic. Wipe out slow cooker.
- Cut pork belly into 1 inch (2.5 cm) cubes.
- Stir together grape jelly, ketchup and hot pepper flakes in slow cooker. Add pork belly cubes and stir to coat evenly. Cover and cook on LOW for 2 hours or on HIGH for 1 hour until pork belly is coated well and very tender.
