This easy oven-roasted pork tenderloin recipe uses the freshness from a squeeze of lemon to bring out the decadence and simplicity of the meat perfectly.

Ingredients:
- 1 Ontario pork tenderloin, about 12 oz/375 g
- 1 tbsp (15 mL) neutral oil
- 1/2 tsp (2 mL) each salt and pepper
- 1/2 tsp (2 mL) garlic powder
- 2 tsp (10 mL) lemon zest
- 3/4 tsp (3 mL) cracked black pepper
- Half lemon
Cooking Instructions:
- Pat pork tenderloin all over with paper towel. Remove the silverskin from the tenderloin. Preheat oven to 400ºF (200ºC).
- Brush with oil and sprinkle all over with salt, pepper and garlic powder.
- Heat nonstick skillet over medium-high heat and sear pork tenderloin on all sides. Remove from heat and sprinkle all over with lemon zest and pepper.
- Place in oven and roast for about 15 minutes or until meat thermometer reaches 155ºF (68ºC) and centre has a hint of pink inside. Let stand for 3 minutes.
- Slice tenderloin and squeeze with lemon before serving. Season with additional salt and pepper, if desired.
