Easy Oven-Roasted Pork Tenderloin

This easy oven-roasted pork tenderloin recipe uses the freshness from a squeeze of lemon to bring out the decadence and simplicity of the meat perfectly.

Ingredients:

  • 1 Ontario pork tenderloin, about 12 oz/375 g
  • 1 tbsp (15 mL) neutral oil
  • 1/2 tsp (2 mL) each salt and pepper
  • 1/2 tsp (2 mL) garlic powder
  • 2 tsp (10 mL) lemon zest
  • 3/4 tsp (3 mL) cracked black pepper
  • Half lemon

Cooking Instructions:

  1. Pat pork tenderloin all over with paper towel. Remove the silverskin from the tenderloin. Preheat oven to 400ºF (200ºC).
  2. Brush with oil and sprinkle all over with salt, pepper and garlic powder.
  3. Heat nonstick skillet over medium-high heat and sear pork tenderloin on all sides. Remove from heat and sprinkle all over with lemon zest and pepper.
  4. Place in oven and roast for about 15 minutes or until meat thermometer reaches 155ºF (68ºC) and centre has a hint of pink inside. Let stand for 3 minutes.
  5. Slice tenderloin and squeeze with lemon before serving. Season with additional salt and pepper, if desired.
