Cinnamon Rubbed Pork Tenderloin

This tasty pork tenderloin recipe is courtesy of Foster Feasts from Shelburne, ON.


Yield: Serves 4-6
Preparation Time: 10 minutes
Cooking Time: 18-25 minutes

 

Ingredients:

  • 2 Ontario pork tenderloins
  • 4 tablespoon of extra virgin olive oil
  • 2 tablespoon of cinnamon
  • 1/2 teaspoon of salt
  • Two apples cored and sliced
  • 1 cup of cranberries (frozen or fresh)
  • 4 tablespoons of honey 
  • 1 shallot or 1/4 cup of diced white onion
  • 1/4 teaspoon of thyme (fresh or dried)
  • 1/4 teaspoon of sage (fresh or dried)

Cooking Instructions:

  1. Preheat oven or grill to 375°F (190°C).
  2. Season pork tenderloins with cinnamon, salt, and 2 tablespoons of olive oil.
  3. Sear pork in a hot skillet with the remaining oil for 2–3 minutes on each side; remove and set aside.
  4. Add diced apples, onion, and cranberries to the skillet. Drizzle with honey, stir, and top with fresh herbs. Nestle the pork back into the skillet with the fruit mixture.
  5. Roast for 18–25 minutes, or until pork reaches 155°F (it will rise to 160°F while resting).
  6. Remove, drizzle with 2 tablespoons of honey, tent with foil, and rest 10 minutes. Slice and serve.
