Ingredients:
- 2 Ontario pork tenderloins
- 4 tablespoon of extra virgin olive oil
- 2 tablespoon of cinnamon
- 1/2 teaspoon of salt
- Two apples cored and sliced
- 1 cup of cranberries (frozen or fresh)
- 4 tablespoons of honey
- 1 shallot or 1/4 cup of diced white onion
- 1/4 teaspoon of thyme (fresh or dried)
- 1/4 teaspoon of sage (fresh or dried)
Cooking Instructions:
- Preheat oven or grill to 375°F (190°C).
- Season pork tenderloins with cinnamon, salt, and 2 tablespoons of olive oil.
- Sear pork in a hot skillet with the remaining oil for 2–3 minutes on each side; remove and set aside.
- Add diced apples, onion, and cranberries to the skillet. Drizzle with honey, stir, and top with fresh herbs. Nestle the pork back into the skillet with the fruit mixture.
- Roast for 18–25 minutes, or until pork reaches 155°F (it will rise to 160°F while resting).
- Remove, drizzle with 2 tablespoons of honey, tent with foil, and rest 10 minutes. Slice and serve.
