This oven-roasted pork roast recipe is wrapped in bacon for added flavour and crunch. The simplicity of bacon adds a hint of smoke flavour to the pork roast and marries perfectly with the fresh herb combination.

Ingredients:
- 1 boneless Ontario pork centre cut loin roast (about 1 1/2 lb/750 g)
- 1/2 tsp (2 mL) pepper
- 2 tbsp (30 mL) chopped fresh parsley
- 1 tbsp (15 mL) chopped fresh thyme
- 2 cloves garlic, minced
- 6 to 8 slices bacon
Cooking Instructions:
- Pat roast dry and sprinkle all over with pepper.
- Preheat oven to 400ºF (200ºC). Place a small rack into a roasting pan.
- In a small bowl, combine parsley, thyme and garlic.
- Rub herb mixture all over roast to coat. Using 1 slice of bacon at a time, start wrapping around the pork roast to cover. Place bacon covered roast onto rack and add 1 cup (250 mL) of water to pan. Roast for about 1 hour and 15 minutes or until thermometer registers 155ºF (68ºC) and bacon is crisp.
- Let stand for 10 minutes before slicing.
